Pocket Number 30: You Me Sushi, Luton

You Me Sushi is situated in the building adjacent to Luton’s town hall. It serves takeaway grab-and-go sushi and is part of the sushi franchises, such as Itsu, YO! Sushi, and Wasabi Sushi & Bento, which came out of London in the 2000s. A selection of premade sushi boxes with maki, uramaki, temaki, nigiri and sashimi in different iterations are on display in the fridge and there are also further menus available, up at the counter, including poke bowls, soups, hot dishes and curries. Most things on display are under £10.

I got myself a tuna poke bowl and spoke to Ash, working behind the counter and told her about my project.

She said the Luton branch opened around 3 months ago and that business was doing well.

She gave to the project some chopsticks and then told me to “do something I you were thinking to do in life” – putting the next choice entirely on me!

Ash at You Me Sushi is the 30th Pocket of Luton, and there’s no more space on the frame, so that [30] Pockets of [Luton] can now be assembled.
